Seriously Good “Fried” Pickle Dip with Greek Yogurt

Description

If you want a flavor packed dip that is a total crowd-pleaser, this creamy fried pickle dip is IT! Its Greek yogurt base delivers a boost of protein (almost 25 grams per cup) and calcium, complemented by the tang of dill pickles, and flavor explosion of ranch seasoning, and fresh dill. The toasted panko topping adds a satisfying crunch to each bite. Whether for a game day party, family gathering, or a simple weekday snack, you’ll be making this on repeat!


Ingredients

  • ½ cup cream cheese, softened

  • 1 cup plain greek yogurt ( I like 2-5%)

  • 1 tablespoon pickle juice

  • 1 cup diced dill pickles

  • 2 teaspoons garlic powder

  • 1 teaspoon onion powder

  • 1 tablespoon ranch seasoning

  • 2 tablespoons fresh dill, chopped

For the panko topping:

  • 1 tablespoon salted butter

  • ½ cup panko breadcrumbs

  • Salt and pepper

  • ¼ cup fresh chives, minced


Instructions

  1. Melt the butter in a pan over medium-low heat. Add the panko to the pan and season with salt and pepper. Cook, stirring frequently, until the panko is golden brown, about 2-3 minutes. Remove from heat and let cool, then stir in the chives.

  2. To a medium bowl, add cream cheese, yogurt, pickles, pickle juice, garlic powder, onion powder, ranch seasoning and dill and stir to combine well (alternatively you can add everything to a food processor, in which case no need to dice the pickles. Blend until well combined, but pickles are still a bit chunky)

  3. Gently fold half of the panko mixture into the dip and stir to combine. Transfer to a serving dish and top with remaining panko mixture and more dill if you’d like.

  4. Serve with chips, crackers or fresh veggies and enjoy!
